Delight in a Southern Supper
Just thinking about the party made me take a tour through the cookbook. I have to say it is one of the most complete compendium of favorite local recipes ever compiled. From Halley Neal's glazed bacon,, which any sweets-loving carnivore could devour by the pound, to Evelyn Benefield's fabulous barbecue ribs, Ann Cox Eastes' spinach grits, Jeanne Bragg's chicken casserole and Love Woodfin Beasley's spinach and artichoke casserole, this book contains beloved recipes. If you don't have a copy, visit the Oakland's Historic House Museum and pick up one soon. Preheat the oven to 350ºF. Place one frozen pie crust in a pie pan on a cookie sheet. Spoon 1/ 2 cup sugar into the bottom of the crust. Add the flour with your fingertips. Mix sugar and flour together and level evenly. Scatter the peaches with their juice on top of sugar-flour mixture. Scatter the remaining 1 /4 cup sugar over peaches, squeeze on lemon juice and dot with butter. Cut remaining pie crust into half inch strips and layer the top in lattice style, making sure to secure the strips to the bottom crust at the sides. Press crusts together with fingertips. Brush top of crust with milk and sprinkle with the last tablespoon of sugar. Bake at 350ºF for 50 to 55 minutes. Serves 8.Heart Of Palm - News

Pickled Asparagus and Pickled Heart of Palm
Pickled asparagus is tasty and so is pickled heart of palm. I have begun to keep one or two pickled vegetables in my refrigerator all the time. A few stalks of pickled asparagus or heart of palm add nicely to a meal. Pickled vegetables are a bit strong to serve as all the vegetables in a meal, but I have done it more than once.
Ingredient list:
1 can of asparagus Apple cider
Directions: Add asparagus to an airtight plastic container. Submerge in apple cider vinegar. Add a generous glug of apple cider to sweeten. Add heart of palm to another airtight plastic container. Submerge in apple cider vinegar. Add a generous glug of apple cider to sweeten. Let sit in refrigerator overnight before you start enjoying your pickled goodness.
Notes: You can pickle vegetables without adding apple cider as a sweetener, but the result is a little harsh and a glug or two of apple cider takes the edge off in a nice way.
I used canned asparagus and heart of palm in my pickling because it is easy, cheap, and endlessly available. I don’t know if this approach works well with fresh stuff or not.
